Be cool like a cucumber

Even though summer is on its way out, it’s still prime season for cucumbers and you will want to enjoy their freshness before it’s too late. Cucumbers are nutrient-rich and low in calories but high in many important vitamins and minerals. Cucumbers also contain antioxidants and are a great source for hydration. Proper hydration can affect everything from physical performance to metabolism.
Here’s an easy and refreshing cucumber salad recipe:
In a large bowl, toss together cucumbers, onion, vinegar, honey, and salt. Chill for 20 minutes. Transfer to a serving bowl, leaving any excess water behind. Sprinkle with the dill and chives, if desired. Season with several grinds of pepper and serve.
