On a hot afternoon, a lean salpicón for dinner is a great choice! It's light, refreshing, and the lean meat (like chicken or beef) makes it satisfying without feeling heavy. Mexican Salpicón de Res is a mouthwatering regional Mexican shredded beef dish served at room temperature or cold. While traditionally made with Brisket, it packs a lot of greens too like roasted chiles, crispy radishes, avocado, tomato, onion, cilantro on a bed of romaine lettuce, tossed with a Chipotle and vinegar dressing, and finally sprinkled with Queso Ranchero. It’s a burst of flavors with the succulent, melt in your mouth brisket and the crisp cool salad vegetables. Here are some variations:
Classic Chicken Salpicón: Use shredded cooked chicken breast (which is lean) mixed with diced tomatoes, onions, bell peppers, cilantro, lime juice, and a light vinaigrette. This is a super refreshing and flavorful option. You could also use rotisserie chicken for extra ease.
Beef Salpicón: If you prefer beef, use a lean cut like flank steak or top round, cooked and shredded. Combine with the same fresh vegetables and lime dressing as the chicken version.
Vegetable Salpicón: For a vegetarian or vegan option, create a salpicón focusing on fresh vegetables like cucumbers, tomatoes, bell peppers, corn, and black beans, dressed with a light vinaigrette. You can add avocado for creaminess.
