The power of the pumpkin

Pumpkins are not only bountiful in the fall, but they also pack loads of nutrition inside their festive orange skins.

   For starters, pumpkins are an excellent source of vitamins A, C, E, and K, as well as minerals like magnesium, potassium, and iron. The high levels of vitamin A in pumpkins, in the form of beta-carotene, support eye health and protect against age-related macular degeneration. 
   Pumpkins are also low in sodium and contain potassium, which helps regulate blood pressure.   
   The high fiber content in pumpkins also promotes healthy digestion, prevents constipation. 
   Pumpkins are rich in antioxidants, including beta-carotene, vitamin C, and selenium. These antioxidants help protect cells from damage and reduce the risk of chronic diseases. 
   Finally, pumpkin seeds are a good source of protein, magnesium, and healthy fats.
