Recent studies have shown that by making an effort to not only keep a Mediterranean Diet but to reduce as many calories as possible can result in huge health benefits. Fortunately, the diet offers an incredible variety of foods to choose from – some of them may be very familiar to El Pasoans – like these hearty vegan tacos that are quick and easy to make, perfect for busy weeknights. They are so tasty no one will miss the meat or dairy.
