By now everyone is feeling the pinch of the cost of eggs. With no relief in sight, (experts are saying it will be at least 6 months before we see prices stabilize) these are healthy and versatile substitutes for eggs:
• Tofu: Provides protein and a similar texture to eggs.
• Mashed banana: Adds moisture and sweetness to many recipes.
• Chia seeds: Mix with water to create a gel-like substance that binds ingredients.
• Flax seeds: Like chia seeds, ground flax seeds can be mixed with water to form an egg substitute.
• Aquafaba: The liquid from canned chickpeas, it whips up like egg whites.
• Quinoa: A grain that contains protein and can be used as a binder.
• Pumpkin seeds: Ground pumpkin seeds provide protein and a nutty flavor.
• Yogurt: Adds moisture and leavening.
• Milk: Can be used in some recipes as a substitute for eggs.
• Cheese: Melted cheese can provide a creamy texture.
• Apple sauce: Adds moisture and a slightly sweet flavor.
