Get pumped about cooking with pumpkin

Pumpkin is beneficial for weight loss because it's largely made up of water, so it is low in calories while still containing many nutrients. But a slice of pumpkin pie or pumpkin roll is hardly considered diet food. Try adding more pumpkin to your diet by making pumpkin soup, pumpkin oatmeal, roasted pumpkin, or these pumpkin energy bites.
Pumpkin Energy Bites:
Ingredients
2 cups oats
1/2 cup canned pumpkin puree (or better yet, make your own.)
1/4 cup almond butter or peanut butter
1/4 cup chia seeds
1/4 cup pumpkin seeds
1 teaspoon vanilla extract
1/2 teaspoon cinnamon (optional)
1/2 cup maple syrup or honey
generous pinch of salt
1/2 cup dark chocolate chips
Instructions
• Pulse all ingredients (except chocolate chips) in a food processor until well-mixed.
• Add chocolate chips and pulse a few more times until they are in small pieces.
