Stuffed Apricots

Apricots are plentiful this time of year. In fact, if you have an apricot tree in your yard, you may have trouble deciding what to do with so many of them. Aside from being tasty and nutritious, they are versatile. One idea that you may want to try are these stuffed apricot hors d’oeuvres. And with only four ingredients, they make for an easy cocktail party appetizer.
Ingredients
1 lb. fresh apricots, split and pits removed
1/4 cup wildflower honey
1/4 cup chopped pistachios
2 oz goat cheese
Instructions
1. Spray a broiler-safe sheet pans with nonstick spray.
2. Heat your oven’s broiler to high, with top rack in upper position.
3. Split the fresh apricots in half and remove the pits. Layer cut side up on prepared sheet pan.
4. Brush each apricot with honey to coat.
5. Broil on high 10-15 minutes, checking frequently and turning pan as needed to make sure all apricots get nice color and caramelization.
6. Once broiled and charred, allow to cool enough to handle, about 10-15 minutes.
7. To stuff, portion out 1/2 tsp of goat cheese for each apricot half. Roll into a ball with your hands, and place in the center of the apricot. Continue until all apricots are stuffed with cheese.
8. Top with chopped pistachios
9. Drizzle with remaining honey
10. Serve and enjoy!
