Say OK to Okra

One of the many late-summer harvest vegetables is okra and boy does it pack a nutritional KO! Okra is an excellent source of vitamins C and K1. Vitamin C is a water-soluble nutrient that contributes to your overall immune function, while vitamin K1 is a fat-soluble vitamin that’s known for its role in blood clotting. Additionally, okra is low in calories and carbs and contains some protein and fiber. Many fruits and vegetables lack protein, which makes okra somewhat unique.
Roasted Okra Recipe
Ingredients
• 18 fresh okra pods, sliced 1/3 inch thick
• 1 tablespoon olive oil
• 2 teaspoons kosher salt, or to taste
• 2 teaspoons black pepper, or to taste
Directions
• Step 1: Preheat the oven to 425 degrees F (220 degrees C).
• Step 2: Arrange okra slices in a single layer on a foil-lined baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
Step 3: Roast in the preheated oven for 10 to 15 minutes.
