Cheesy sweet potato nachos

Fall football is as good an excuse to snack as any. It’s no surprise that nachos, chicken wings and beer can really pack in the calories. Here is an easy, healthy and equally satisfying snack that is sure to score big with the fans in your home.
Ingredients
1 gold sweet potato, peeled, cut into ‘fries’
1 tsp Taco seasoning (or, garlic salt, pepper, and just a dash of cumin)
1/3 cup coarsely grated cheddar
7 cherry tomatoes, quartered
1/2 avocado, stoned, peeled, chopped
2 tsp lime juice
2 tbsp Greek-style yogurt
Select all ingredients
Instructions
1. Preheat oven to 425°. Line a large baking tray with parchment paper. Arrange the sweet potato on the lined tray and spray with olive oil spray. Sprinkle with seasoning mix. Bake, turning the sweet potato halfway through cooking, for 15 mins or until tender.
2. Sprinkle cheddar over the sweet potato on the tray. Bake for 5 mins or until the cheddar melts.
3. Combine the tomato, avocado and lime juice in a small bowl.
4. Spoon the tomato mixture over the sweet potato and drizzle with yogurt. Season to taste.
