In the summer, watermelon is usually the star of the show. And while delicious and refreshing, we would like to remind you about its often-overlooked cousin, the cucumber. Summer offers a wide harvest of all the delicious varieties of cucumbers – some of them are easier to prepare as they do not have a waxy skin.

But more importantly, the cucumber is low in calories, almost completely fat free and low on the glycemic index which means it won’t spike blood sugar. They have also been attributed as being able to help ease diverticulitis, or inflammation and even inhibit cancer growth.Here is a super easy way to enjoy your cucumber:

Cucumber salsa:

Cucumber is just the perfect veggie for pairing with jalapeño, cilantro and lime! It adds a cooling essence and a hydrating crunch to each bite. Zingy and zesty, it’s ideal for dipping chips or showering over tacos. Or sprinkle it over grilled salmon for a summery meal.
