If you are looking for an easy, nutritional and inexpensive dinner, try Sheet-Pan Ratatouille. Don’t worry, only the name is tricky (rah-tah-too-ee) because this is as simple a recipe as you can find. In reality, this recipe is just a sheet of roasted veggies. Try: eggplant, zucchini, bell pepper, tomatoes, garlic, onion, and fresh herbs.Roast them in the oven with a light olive oil drizzle and for a ratatouille-inspired flavor, douse with balsamic vinegar for a little extra punch.

The next step is up to you: You can try topping it on polenta, or mix into pasta, or serve on toast with a fried egg. Other great options include mixing with a grain and some greens (like spinach), throwing into a frittata or quiche, topping on your protein of choice (like salmon), or tossing into a big salad with toasted nuts. Ooh-la la!
