Mashed Cauliflower

As the temperatures drop we all look to warm comfort food to warm our spirits. Traditionally, mashed potatoes have been just the thing. People who are trying to move away from a high carb, starchy diet may be surprised to find how mashed cauliflower is a wonderful and nutritious substitute.
Mashed Cauliflower is low in carbs AND they taste just as good as regular Mashed Potatoes. The secret lies in flavoring them with just the right ingredients to take them from bland to mouthwatering. If you haven't tried this before, you will fall in love with Cauliflower Mashed Potatoes!
Easy Mashed Cauliflower:
This easy mashed cauliflower recipe is made with just 6 ingredients–cauliflower, garlic cloves, buttermilk, butter and sour cream or cream cheese.
Simply boil or steam the cauliflower in water or broth until it becomes tender. Drain the cauliflower and add the garlic cloves. Puree it with a little buttermilk in an immersion blender until it becomes smooth. If you don’t have an immersion blender, you can use your regular blender, just be careful not to over-process it and turn it into soup. To add a little more texture to the mash, you can always use cream cheese as a thickener, light sour cream also works great. Adding a touch butter gives it that creamy, mashed potato flavor. Add salt to taste. You can add herbs like parsley or chives, cheese, bacon, whatever you would in your regular mash.
