Summer brings us many seasonal fruits and vegetables but perhaps none are as heart healthy as the tomato. Considered a super food, the tomato offers taste, texture and versatility. Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits including reduced risk of heart disease and cancer. They are also a great source of vitamin C, potassium, folate, and vitamin K.

Sautéed tomatoes prepared with Olive Oil have an even greater health benefit. An Australian study found that by cooking your tomatoes for just a few minutes in olive oil vastly improves the bioavailability of the fruit’s lycopene which means your body can absorb more of it.
