Celery has been underrated for many years, but take note: Celery offers anti-inflammatory and many other health benefits. In addition to well-known antioxidants like vitamin C and flavonoids, scientists have now identified at least a dozen other types of antioxidant nutrients in celery. These have been shown to help protect us against unwanted oxidative damage to our cells, blood vessels, and organ systems.
Many recipes call for raw celery and celebrate its crunchy goodness but if you are planning to steam vegetables as part of your meal, you can include celery without having to worry about excessive loss of its nutritional benefits. But make sure to eat it soon after you get it home from the grocery store – like within a week. This will help to preserve its maximum nutrient potential.
